What do you think would be the best OS to run on this for gaming and overall entertainment use?
XP? Vista? WIndows 7? and why....

Obviously Windows 7. You clearly have (or are looking to get) a new, up-to-date computer that can easily run this operating system. Getting XP or Vista would hardly make a difference and should only be gotten if you personally like them better.
